Flourless Pancakes

Yup, you read that right. FLOURLESS PANCAKES! 

If you're trying to cut down your carb intake and still want to indulge on these fluffy golden brown goodness that we call pancakes, this is for you. 

It took me about a couple times to get this recipe right. I tried using 1 banana and 2 eggs, but that didn't work because the pancake just tasted like a sweet frittata. I decided to use 2 bananas and 2 eggs, which worked really well, but still tasted too much like a sweet frittata. Finally, I used coconut oil and it worked perfectly. 


  1. 2 eggs 
  2. 2 bananas 
  3. Coconut oil (you can use any type of oil, but this gives it more flavour) 

Optional Toppings

  1. Yogurt
  2. Blueberries
  3. Maple syrup


  1. Mash your bananas 
  2. Add your eggs. Mix until everything's incorporated. (Lumps are okay!) 
  3. Heat up your pan, add coconut oil, and make your pancakes!
  4. Serve it however you like.
