Coconut Cake

This cake is so heavenly. If you were able to come to our launch party back in January, you would have tasted this cake and agreed- it is absolutely delicious. It is moist and full of flavour. Please do try it out!



  • 2 cups flour
  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 cup water
  • 1/2 cup buttermilk
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp coconut extract
  • 1/4 unsweetened shredded coconut


  • 1/2 cup butter
  • 6 tbsp milk
  • 16 oz powdered sugar
  • 1 tsp coconut extract


  1. Preheat oven to 400F. 
  2. Grease two round 9 inch pans. Mix flour and sugar. 
  3. Combine butter, shortening and water and bring to a boil.  Add to flour mixture. 
  4. Add buttermilk, baking soda, eggs (In that order.  Mix thoroughly in-between each addition). 
  5. Stir in vanilla and coconut extract. 
  6. Add to pans and bake for 20-30 minutes or until toothpick comes out clean. 
  7. For icing, bring butter and milk to a boil.  Remove from heat and add sugar and coconut extract. 
  8. Poke holes with fork on cake and while still hot, pour icing mixture over the cake. 
  9. Add shredded coconut over top of cakes. 
  10. Let cool completely.  Remove from pans, cut and serve.
