Apple Butterscotch Pancakes

Don't you just love it when you wake up to the smell of freshly brewed coffee, and plate of stacked pancakes? Make your Valentine's Day extra special for your loved one/s with this recipe!

Apple-Butterscotch Compote:
2 red apples
2 cups brown sugar
1 cup butter
1 tbsp cinnamon
1 tbsp all-spice
1 tsp nutmeg

Dry Mix:
2 cups all-purpose flour
1 tbsp baking powder
4 tbsp sugar
1 tsp cinnamon
1 tsp salt

Wet Mix:
1 large egg
1/4 cup melted unsalted butter
2 cups buttermilk
1 tbsp vanilla extract

Vegetable oil

Equipment List:
Small sauce pan
Non-stick pan
Measuring cups and spoons
2 stainless steel bowls


  1. Peel and cut apples. 
  2. In a small saucepan, start melting the butter for your apple-butterscotch compote in medium heat. Add apples followed by brown sugar, cinnamon, all-spice, and nutmeg. Stir it all together and leave it until the apples are cooks.
  3. Mix all of your dry ingredients together in one bowl and your wet ingredients in another. 
  4. Incorporate your wet mix into the dry mix. Make sure that you are not over mixing the batter. Lumps are key to fluffy pancakes!
  5. Melt a tbsp of butter on your non-stick pan. Feel free to make your pancakes big or small. I personally like to make smaller pancakes so I can stack them up, plus you can use an ice cream scoop for the batter. 
  6. Plate your pancakes, and top it off with your apple-butterscotch compote!
